Yankee White's Famous Greek Quesadillas

  • Tis also vegetarian (cheese, greek yoghurt?)

Ingredients:

Large tortillas, Greek yoghurt, shredded mozarella cheese, feta cheese, pitted kalamata olives, semi-sun dried tomatoes, red onion and red bell pepper (also known as capsicum).

Method:

1. Flatten a tortilla on a sandwich press 2. Chop up the red onion, bell pepper and feta cheese 3. Place shredded mozarella cheese on top of tortilla, remember that with Quesadillas it's a simple fold of the semi-circle, so pile on your ingredients on only one half of the circle 4. Place chunks of feta cheese amongst the shredded mozarella cheese 5. Place the rest of the ingredients (semi-sun dried tomatoes, pitted kalamata olives, chopped red onion and bell pepper) on top 6. Fold tortilla in half over ingredients 7. Turn on sandwich press 8. Ensure even distribution of pressure or 'flattening' 9. Place Yankee White's Famous Greek Quesadillas onto a plate covered with Greek yoghurt 10. Prepare to get your hands dirty 11. ??? 12. Profit!
